Bikes would be tough to make... I suppose it could be done but it would be quite complicated and it definitely wouldn't look like you were riding the bike.

invisible seats, collidecharacter disabled objects, forced arms angles. could be done, but i'm not sure how to mirror the character for that.

Making the skate ramps = Easy
Making a regenerate bike script = Medium
Making the the actual bike = Hard
You have to get the seats and make a drive script...You could try build a BMX park game...But it could take some time. =D
