Moon over the Castle from the Gran Turismo series is amazing.
I've also always liked the background music to NASCAR '98 and NASCAR '06 but never been able to find them online.
The background music to MLB Power Pros is alright... better than the anime-style characters, that's for sure
And of course, you can't mention background music without mentioning Mario. And the remixes of Mario.
